Starting a Wine Collection



Starting a wine collection is not as daunting as people think it is. There are many reasons why you would start a collection. First, buying wine in bulk is cheaper than buying wine in individual bottles. Second, you always have an variety of wine to choose from when guest stop by unexpectedly. The only investment on your part is setting up an area to store your wine; a mini wine cellar.


Your wine cellar can be as simple as a strategically located closet or a corner in your basement. You also need a wine rack to hold your wine bottles. Wine racks are important as they store wine bottles at the right angle. There are many different kinds of wine racks. Some are for desk top use, others under the counter. If you are starting your journey to being a wine aficionado, here are some of the things you may want to consider.


Start a wine cellar on a small scale initially.


Why do this?


* You can take advantages of bargains by buying your wine by the case. You will have wine available for any occasion.


* Correct wine storing techniques. Properly stored wine retains its flavor for a longer period of time when compared to wine stored on a regular shelf standing up. Invest in a good wine rack. There are many different types of wine racks in the market to choose from. Different styles, designs made of many different materials. Pick one that matches your personal style and fits your budget. Take also into consideration how many bottles you will be storing, therefore investing in a wine rack that maximizes on storage capacity. Wine racks allow you to store your wine the proper way to retain the rich flavors. Some wine racks are easy to assemble, are lightweight, and very durable.


* Store the wine in a dark, clean, damp location that has good ventilation. The temperature needs to be kept constant. The best temperature for wine storage needs to be kept between 50 to 55F. The seasonal temperature change of ten degrees doesn't affect the wine but a rapid regular change causes the wine to age prematurely.


* Relative humidity of 70% is recommended for storing wine. Lack of humidity may cause the cork to dry and shrink and allow air into the wine.


* Darkness is important as exposure to light prematurely ages wine ruining it. The wine also needs to be free of movement to prevent disturbing red wines sediment. Once you put your wine up on your wine rack it should not be moved until it is opened. Proper ventilation is essential to avoid your wines acquiring a musty taste. The cellar should be free of odors as these can penetrate the cork and affect the flavor of your wine.


* Wine needs to be stored horizontally to ensure that the wine stays in contact with the cork. This keeps the cork from drying out and prevents air from coming in contact with the wine.

Wine Utensils



The ideal utensils to use for wine making and boiling ingredients & juices are those of good quality enamel. Those sold under a brand name are most reliable. The utensils must not be chipped.


It is almost impossible to pour clear wine from one bottle to another without stirring up the lees. Because of this, it is a good plan, to siphon off the clear wine when rebottling it.


Using about a yard and a half of surgical rubber tubing or plastic tubing, siphoning is a very simple operation. First, put the bottles or jars of wine on a table and the empty bottles on a stool or box on the floor. Next, put one end of the tubing in the first bottle of wine and suck the other end of the tube until the wine comes; pinch the tube at your lips and - holding on tight - put this end in the empty bottle and then let the wine flow. As the level of the wine falls, lower the tube into it, being careful not to let it touch the lees. When nearly all of the wine has been transferred, pinch the tube at the neck of both bottles, put one end into the next bottle and allow the wine to flow again.


In this way a constant flow is maintained and you have bottles of crystal-clear wine. The sediment from each bottle may be put together; this will clear in time to leave a little more wine.


Most of you will already have heard of one or other home-made wine and will have decided which to make. For those who have not yet decided, preference for a 'port* or 'whisky' may be the deciding factor and this must rest with yourselves.


I would advise you only in this: make, say, a gallon or a half-gallon of a variety of wines and then decide which you prefer over a period of time. I have whittled my own preference down to nine different wines which I brew regularly according to season, leaving the dried fruit for the time when fresh fruit is not available and when roots - potatoes, etc. - are too fresh for wine-making purposes.


NOTE:


Different recipes will call for slightly different approaches, but it must be remembered that whatever else has to be done, the brew must be kept in a warm place throughout the fermentation period, and that the process after fourteen days* fermentation in the tub is the same with all recipes.


Now select your recipe and go ahead with your wine-making, bearing in mind all that I have warned you about.

Old Wine in New Bottle



We're a family of wine drinkers. Anyone who really knows us, and the fact that we are absolutely not corruptible (ahem!) will also know that at a pinch, they might be able to bribe us with a good red wine. So when guests come in from abroad among the other gifts they stagger in with, is the usual quota of bottles - without which they are afraid they might not be accommodated in the Ranganathan household.


Like vultures we fall on the bounty but then unlike vultures and more like squirrels, we proceed to hoard it, and hoard it ... and hoard it and once in a while (actually in the "winter" months) we decide to open a bottle and enjoy it sitting on the balcony, watching the sea.


Yesterday was one of those days. My mother decided it was "time" so she brought out this bottle of French wine from our stock which looked so good you would be forgiven for ending up with a shirt front soaking with dribble. So then dad gets out the bottle opener and sticks it into the cork and twists the handle and twists and twists and twists and ... nothing happens. (If you're getting the feeling by now that this is the story of my life, you might be forgiven - the phrase just seems to describe me and my life so well).


So Dad twists the handle of the bottle opener some more and I watch him with bated breath and cross my fingers and continue to watch and ... nothing happens. He twists some more, some more, some more and ... the cork begins to crumble.


Disaster! A French wine about to go down the drain before our eyes? I scold my dad for using the Rs. 25 bottle opener he bought in Goa, on an expensive bottle of imported wine. "You should have used a proper French bottle opener," I tell him crossly.


Dad says sadly, "There are two lying in the drawer." But it is too late. Anyway, Dad is so used to my furious glares, he has learnt to cope with them in an expert fashion (the same way he does with my mother's constant reprimands about his untidiness, his absent mindedness, his inability to listen and about 687 other major faults) by choosing to ignore it all.


To get back to the bottle. Mum assures us that there is nothing wrong with the Goan bottle opener, she used it on a bottle of Indian red wine recently and it worked just fine. So yes, in fact we do notice now, that the problem has to do with the cork - and conclude that even seemingly good French wines can occasionally be plugged with rotten corks.


By now half the cork is lying in little bits on the table and the rest of it is slowly crumbling into the bottle. It seems most unlikely that we will be able to pull this one out at all, at least not with the conventional method. We are finally forced to somehow wrench out the opener and to use a sharp knife to get at the remnants of the cork. You can guess the rest. The moth-eaten bit of cork which remains in the neck of the bottle quietly disintegrates and sinks in ... And we do the only thing that is possible for us to do. Strain the wine through a square of muslin and store it in an empty bottle of "Old Monk" rum.


Dad fills up our glasses and a few minutes after this heart rending struggle has come to an end, we sit on the balcony with our wine and take a sip. And we sip on contentedly. Don't know if it is just that we are tired from our efforts. But the wine tastes good!
